Ingredients for 2 portions
500 g Plain ready-cooked rice
400 g Spinach
100 g Onion
8 g Garlic
20 g Olive oil
35 g Lemon juice
15 g Fresh dill
100 g Tomato
40 g Water
3 g Salt
1 g Black pepper
Method
Have 500 g plain rice already cooked and chilled safely; cooking it from dry is not included in the 25-minute window. Wash and roughly chop 400 g spinach, dice 100 g onion, mince 8 g garlic and chop 15 g dill.
Warm 20 g olive oil in a large covered pan. Soften the onion for 4–5 minutes, then add the garlic for 30 seconds. Add 100 g chopped tomato, 400 g spinach, 3 g salt and 1 g pepper; cover briefly and cook until the spinach wilts.
Fold in the cooked rice and 40 g water. Cover and heat for 5–7 minutes until the rice is steaming hot throughout and the spinach has softened into it. Turn off the heat and fold in 35 g lemon juice and the dill. Divide all the rice and greens between two bowls.
Suzy Karadsheh’s Greek spanakorizo cooks soaked dry rice in the pan with tomato paste and may finish with feta. This quick vegan adaptation uses already-cooked plain rice, fresh tomato instead of paste, and no feta; reheating the rice thoroughly is essential. The photo shows a softer, herb-rich version with different rice and spinach proportions. It is a substantial rice-and-vegetable meal, not a claim of complete nutrition. Energy and 25-minute timing are editorial estimates for the stated shortcut.
