Ingredients for 4 portions

Method

  1. Rinse brined vine leaves in warm water and trim tough stems. Soften finely chopped onion in half the oil for 5 minutes.
  2. Stir in rice for 1 minute, then add 150 g water and simmer for 5 minutes. Cool and mix with chopped herbs, half the lemon, salt and pepper.
  3. Place a small spoonful of filling at the base of each leaf, fold in sides and roll loosely. Arrange seam-side down in a snug saucepan.
  4. Add remaining water, oil and lemon; place a heatproof plate on top to weigh down. Cover and simmer gently for 35–40 minutes until rice is tender. Cool slightly before serving.

Makes around 20 rolls, five per portion. Do not pack filling tightly because rice expands. Cooking liquid is conservatively counted.
