Ingredients for 2 portions

Method

  1. Trim and rinse 400 g fresh green beans. Finely chop 80 g onion and 10 g garlic, and crush 300 g canned chopped tomatoes with a fork. Chop 10 g parsley; keep the 160 g ready-made bread aside for serving.
  2. Heat 30 g olive oil in a lidded wide pan over medium heat. Soften the onion for 3 minutes, then stir in the garlic for 30 seconds without browning it.
  3. Add the beans, crushed tomatoes, 100 g water, 3 g salt and 1 g black pepper. Bring to a simmer, cover and cook for 30–35 minutes, turning the beans once or twice, until tender and coated in the reduced tomato sauce. Add a small splash of water only if the pan becomes dry.
  4. Stir in the parsley and divide the full pan between two bowls. Serve with 160 g ready-made white wheat bread; the bread is included in the energy estimate.

This is a bread-sized vegan main-meal adaptation of a Greek fasolakia side dish. The source uses fresh grated tomatoes and tomato paste; here crushed canned tomatoes provide both tomato body and liquid. Fresh beans need the stated 30–35-minute simmer, so the full meal is about 45 minutes rather than a 30-minute claim. Buy bread with a vegan-suitable ingredient label; gluten is flagged. The Commons image depicts only green beans in tomato sauce, without the measured bread, and its exact preparation is unknown. Ingredient-based calories and timing are estimates, not kitchen-tested.
