Ingredients for 2 portions
140 g Plain barley and wheat rusks (dakos), dry
400 g Tomato
120 g Feta
20 g Olive oil
30 g Pitted olives
10 g Capers, drained
1 g Dried oregano
0.5 g Black pepper
60 g Water
Method
Split the rusks between two plates. Spoon the measured water over them and leave to soften while preparing the toppings; very thin rusks may need less.
Grate the tomatoes over a bowl, leaving the skins behind. Spoon the tomato and its juices onto the rusks.
Crumble over the feta. Add drained capers, pitted olives, oregano and black pepper, then divide the olive oil between the plates.
Rest for 5 minutes so the tomato soaks into the bread, then serve. No additional salt is needed with the feta, olives and capers.
Two light-meal portions. Use plain egg-free, dairy-free barley/wheat dakos rusks and feta labelled suitable for vegetarians, made with microbial or plant rennet. This version omits myzithra. The photo has extra green garnish and different topping proportions. Baking rusks from scratch is not included in the 15-minute time. Timing and energy are estimates, not kitchen-tested by Schmackig.
