Ingredients for 2 portions
110 g Plain wheat flour
180 g Whole milk
40 g Water
100 g Egg, without shell
250 g Quark, 20% fat in dry matter
25 g Sugar
10 g Butter
4 g Lemon zest
10 g Lemon juice
8 g Icing sugar
1 g Salt
Method
Whisk 110 g plain wheat flour, 180 g whole milk, 40 g water, 100 g beaten egg without shell and 1 g salt into a thin batter. Let it stand for 5 minutes while the pan heats.
Stir 250 g quark with 25 g sugar, 4 g finely grated lemon zest and 10 g lemon juice until smooth. Keep the filling chilled until the pancakes are ready; it contains no raw egg.
Melt 10 g butter in a non-stick pan, using it across four pancakes. Pour in one quarter of the batter and rotate the pan into a thin round. Cook for about 2 minutes, flip, and cook the other side for about 1 minute. Repeat three times, keeping the finished pancakes warm.
Spread a quarter of the chilled quark filling over each cooked pancake, roll it up and place two on each plate. Dust the four rolls with a total of 8 g icing sugar and serve immediately.
A quick pan-cooked Austrian breakfast adaptation of the linked Topfenpalatschinken recipe: no oven glaze, raisins, dessert cup or raw egg in the filling are included. The photographed restaurant plate contains a separate cream-and-fruit dessert that is not part of this recipe or its calories. Use quark labelled vegetarian or made without animal rennet, and check the actual dairy labels and gluten/egg/milk allergens. The 30-minute estimate assumes one non-stick pan and four thin pancakes; cooking results and calories are estimates, not kitchen-tested.
