Ingredients for 2 portions

Method

  1. Place veal cutlets between sheets of baking paper and gently pound to about 4 mm thick. Season with salt and pepper.
  2. Put flour, beaten egg and breadcrumbs in separate shallow bowls. Coat each cutlet in flour, then egg, then loose breadcrumbs without pressing hard.
  3. Heat oil and butter in a wide frying pan over medium-high heat. Fry cutlets for 2–3 minutes each side until golden and cooked through, moving the pan gently.
  4. Drain briefly and serve immediately with lemon.

Traditional Wiener schnitzel uses veal. All coating and frying fat is counted conservatively; some remains in the bowls or pan. Potato salad is separate.
