Ingredients for 6 portions

Method

  1. Knead flour, water, oil and salt into a smooth dough for 8 minutes. Cover and rest for 30 minutes. Heat oven to 190°C.
  2. Peel and thinly slice apples and mix with lemon, sugar, cinnamon and raisins. Toast breadcrumbs in 25 g butter until golden and cool.
  3. Roll dough on a lightly floured clean cloth, then gently stretch very thin with the backs of your hands. Brush with some melted butter, scatter crumbs and add apples along one side.
  4. Use the cloth to roll up the strudel, fold ends under and transfer to a lined tray. Brush with remaining butter and bake for 35–40 minutes until golden. Dust with icing sugar after cooling slightly.

Apple weight excludes cores and peel. Six dessert portions; vanilla sauce or ice cream is not included.
