Ingredients for 2 portions
400 g Unsweetened frozen mixed berries
150 g Fresh strawberries, hulled
50 g Sugar
25 g Corn starch
140 g Water
120 g Cream, 30% fat
Method
Measure 400 g unsweetened frozen mixed berries and 150 g trimmed fresh strawberries; cut the strawberries small. Whisk 25 g cornstarch with 40 g of the measured cold water into a smooth slurry.
Bring the remaining 100 g water, 50 g sugar and frozen berries to a full boil in a saucepan. Boil and stir for 3 minutes so the frozen berries heat through. Stir the slurry again, pour it in while stirring and simmer for 2 minutes until glossy and thick. Fold in the strawberries and heat for 1 minute.
Divide the compote into two dishes and cool for about 30 minutes until comfortable to eat; refrigerate longer if a cold dessert is preferred. Pour 60 g cream over each portion immediately before serving.
Based on REWE’s classic northern German Rote Grütze. This two-person version uses a plain unsweetened frozen-berry mix and water instead of the reference’s fresh cherries, currants and cherry juice, and adds measured cream as pictured. The 50-minute elapsed estimate includes roughly 30 minutes cooling; active preparation and boiling are about 20 minutes. Berry mixes and cooling rates vary. The dessert contains milk and is lacto-vegetarian, but it is not a complete breakfast or planner meal. The image cannot prove its berry mix or sugar level. Calories and times are editorial estimates.
