Ingredients for 4 portions
700 g Thin beef roulade slices
100 g Smoked bacon
120 g Pickled gherkins
180 g Onion
30 g Dijon mustard
120 g Carrot
80 g Celery stalks
600 g Prepared beef stock
150 g Red wine
20 g Rapeseed oil
20 g Plain wheat flour
3 g Salt
2 g Black pepper
Method
Lay out four beef slices and spread with mustard. Add bacon, strips of pickle and half the sliced onion. Roll tightly, tuck in the sides and secure with kitchen string or picks.
Heat oil in a casserole and brown the rolls on all sides. Remove briefly and brown remaining onion, carrot and celery for 5 minutes.
Return rolls, pour in wine and stock, add salt and pepper, and cover. Simmer gently for 90 minutes to 2 hours until beef is tender.
Remove rolls and discard string or picks. Strain or blend the gravy; whisk flour with a little cold water, stir in and simmer for 5 minutes. Serve rolls with gravy.
Serve dumplings or potatoes separately. Pickles and mustard have product-specific ingredients; check labels.
