Ingredients for 2 portions
400 g Plain ready-cooked peeled potatoes
250 g Quark, 20% fat in dry matter
100 g Egg, without shell
60 g Plain wheat flour
40 g Raisins
25 g Sugar
6 g Lemon zest
20 g Rapeseed oil
2 g Salt
Method
Start with 400 g plain peeled potatoes already cooked and cooled; cooking them from raw adds roughly 25 minutes. Mash them smooth. Mix with 250 g quark, 100 g shelled egg (about two medium eggs), 60 g plain wheat flour, 40 g raisins, 25 g sugar, 6 g lemon zest and 2 g salt.
Divide the soft mixture into eight small cakes with lightly damp or floured hands. Use the measured flour in the mixture and form the cakes on a nonstick surface so no extra flour is needed.
Heat half of the 20 g rapeseed oil in a wide nonstick pan over medium heat. Fry four cakes for about 4–5 minutes per side until golden and set through; add the remaining oil and repeat for the other four. Divide all eight cakes evenly between two plates and serve warm.
The Saxon state campaign’s Quarkkäulchen reference combines cooked potatoes, quark, egg yolks, sugar, lemon zest and raisins before pan-frying. This two-person adaptation uses whole eggs and measured wheat flour for structure. Plain potatoes must already be cooked and cooled. Choose vegetarian-labelled quark without animal rennet; otherwise the vegetarian profile is conditional. The Commons photograph includes sour cherries and powdered sugar, neither of which is in the measured recipe. All ingredient energy is estimated; actual absorbed frying oil and cooking time can vary.
