Ingredients for 2 portions

Method

  1. Heat the oven to 180°C. Cut 160 g day-old wheat rolls into bite-size pieces, spread on a tray and toast 10–12 minutes until lightly crisp. Use rolls whose ingredient label suits lacto-vegetarian eating.
  2. While they toast, warm 260 g of the whole milk with 25 g sugar, 50 g plain ground poppy seeds and 1 g salt, stirring until hot but not boiling. Put the toasted bread in a bowl, pour the poppy milk over it and leave 5 minutes to absorb.
  3. For a quick egg-free sauce, whisk 10 g cornstarch and 8 g vanilla sugar into the remaining 140 g cold milk. Heat in a small saucepan, whisking constantly for 3–5 minutes until it thickens and bubbles gently. Divide the softened poppy bread between two dishes and spoon over all the warm sauce.

Adapted from Tas Tóbiás’s Mákos guba. The source uses egg-yolk vanilla custard; this measured lacto-vegetarian adaptation uses cornstarch and pure vanilla sugar, so it is not a reproduction of the source’s sauce. Day-old rolls are required for the intended texture; fresh soft rolls need separate drying time. This is a dessert, not counted as a breakfast or complete meal. Check poppy and vanilla product labels and roll ingredients; the photographed sauce and possible nuts cannot be identified from the image. Energy and 30-minute timing are editorial estimates.
