Ingredients for 4 portions

Method

  1. Dice beef into 2 cm cubes and chop onions. Heat oil in a heavy pot and soften onions for 8 minutes, then brown beef for 6 minutes.
  2. Take the pan briefly off the heat and stir in paprika, caraway and garlic. Add chopped tomato, pepper and measured water.
  3. Season with salt and pepper, cover loosely and simmer gently for 90 minutes until beef is nearly tender.
  4. Add diced potatoes and carrots and simmer for another 25–30 minutes until tender. Adjust consistency with water if needed.

Hungarian gulyás is a soup-like dish; thicker meat stews are often called pörkölt. Noodles or bread are not included.
