Ingredients for 4 portions
160 g Plain wheat flour
100 g Egg, without shell
250 g Whole milk
130 g Water
400 g Boneless skinless chicken thigh
120 g Onion
150 g Tomato
12 g Paprika powder
150 g Sour cream, 20% fat
25 g Rapeseed oil
200 g Prepared chicken stock
3 g Salt
1 g Black pepper
Method
Whisk 140 g flour, eggs, milk, 100 g water and 1 g salt into a thin batter. Rest for 10 minutes, then cook eight crêpes in a non-stick pan brushed with 10 g oil.
Soften onion in remaining oil for 6 minutes. Add chopped chicken and cook for 5 minutes, then paprika, tomato, stock, remaining salt and pepper. Cover and simmer for 20 minutes until chicken is cooked.
Lift out chicken with some onion, chop finely and mix with a little sauce. Divide among crêpes and fold into neat parcels in a baking dish.
Whisk remaining flour with remaining water and sour cream, stir into the cooking sauce and simmer for 3 minutes. Pour over crêpes and bake at 180°C for 15 minutes.
Two filled crêpes per portion. Chicken is used here; veal or beef fillings are also common.
