Ingredients for 2 portions
240 g Plain full-fat labneh, strained yogurt
160 g Wheat pita bread
15 g Olive oil
12 g Za'atar spice blend with sesame
120 g Cucumber
120 g Tomato
50 g Pitted olives
1 g Salt
Method
Use 240 g plain full-fat ready-made labneh and two wheat pita breads weighing 160 g in total. Wash and slice 120 g cucumber and 120 g tomato; weigh 50 g pitted olives.
Spread the labneh over two plates. Make a shallow well in each portion and divide the measured 15 g olive oil between them. Sprinkle on all 12 g za’atar and 1 g salt.
Warm the pitas in a dry pan for 1–2 minutes per side, just until flexible. Divide the warm bread, cucumber, tomato and olives between the plates.
Scoop the seasoned labneh and vegetables into the warm pita as you eat, or fold each pita around its portion and serve immediately.
Two substantial breakfast portions, also a light lunch. The linked Lebanese-American wrap reference uses labneh, pita and fresh vegetables; olive oil, olives and za’atar follow familiar Lebanese breakfast accompaniments. Straining yogurt or baking pita is not included in the 15-minute total. Buy plain full-fat strained yogurt and check the package for gelatin or animal additives; check pita for animal ingredients. The Commons photo shows only labneh in a much larger pool of oil, without the measured bread, vegetables, olives or za’atar. Calories and timing are estimates, not kitchen-tested.
