Ingredients for 2 portions

Method

  1. Remove the tough core from 500 g white cabbage, cut it into short thin squares, sprinkle with 2 g salt and leave for 15 minutes. Meanwhile finely dice 100 g onion. Gently squeeze excess water from the cabbage; this helps it brown instead of steaming.
  2. Heat 30 g rapeseed oil in a wide pan, dissolve 10 g sugar until pale gold, then add the onion, squeezed cabbage and 2 g caraway. Cook over medium heat for 25–30 minutes, stirring frequently, until soft and patchily browned. Lower the heat or add a spoonful of water if the sugar threatens to burn.
  3. During the last 10 minutes, boil 200 g dry Fleckerl egg pasta in water using its packet time, about 6 minutes for the referenced product. Drain and fold into the browned cabbage. Season with 1 g black pepper and the remaining 1 g salt, divide between two bowls and serve hot.

Adapted from the Sacher cookbook method published by ichkoche.at. Rapeseed oil replaces the source’s lard, making this suitable for ovo-vegetarians if the purchased egg pasta contains no other animal ingredients. This is not vegan because the Fleckerl contain egg. The product-specific 355 kcal/100 g and approximately six-minute pasta time come from Recheis Goldmarke Fleckerl; brands differ. Fifteen minutes of cabbage salting and 25–30 minutes of browning are included in the 50-minute estimate; the photo cannot verify pasta ingredients.
