Ingredients for 2 portions
300 g Quark, 20% fat in dry matter
30 g Whole milk
5 g Olive oil
20 g Fresh chives
10 g Fresh parsley
20 g Onion
2 g Salt
0.5 g Black pepper
160 g Sliced mixed rye and wheat bread
Method
Use 300 g plain quark with 20% fat in dry matter and four slices of ready-made mixed rye-wheat bread weighing 160 g in total. Finely chop the chives, parsley and peeled onion.
Beat the quark with 30 g milk and 5 g olive oil until it spreads easily. Mix in the herbs, onion, salt and pepper.
Leave the quark for 5 minutes while arranging the bread. Divide the bread and spread evenly with the measured herb quark. Serve immediately.
Two substantial breakfast portions; also a light lunch. Bread baking and quark-making are not included in the 15-minute total. Buy plain quark explicitly suitable for vegetarians because production cultures or rennet may vary; check the rye-wheat bread label for egg, dairy and other additions. The photograph contains a larger dish of quark with a small piece of bread; quantities and serving presentation differ. Timing and energy are estimates, not kitchen-tested by Schmackig.
