Ingredients for 4 portions

Method

  1. Soak bread in milk, then squeeze lightly. Mix with beef, pork, egg, finely chopped onion and anchovies, parsley and pepper. Shape into 12 meatballs.
  2. Bring stock and bay to a gentle simmer. Add meatballs and poach for 15–18 minutes until cooked through, then lift out and reserve 500 g cooking broth.
  3. Melt butter, stir in flour for 1 minute and gradually whisk in reserved broth. Simmer for 5 minutes until smooth.
  4. Stir in cream, capers and lemon. Return meatballs and warm gently for 3 minutes; remove bay before serving.

Three meatballs per portion. All stock and soaking milk are conservatively counted although some are discarded. Anchovies add a fish allergen flag; potatoes are separate.
