Ingredients for 2 portions
400 g Cooked fava beans, drained
100 g Cooked chickpeas, drained
8 g Garlic
30 g Lemon juice
25 g Olive oil
2 g Ground cumin
12 g Fresh parsley
140 g Tomato
120 g Cucumber
140 g Wheat pita bread
2 g Salt
100 g Water
Method
Drain canned fava beans and chickpeas and put in a saucepan with the water. Simmer gently for 8 minutes, mashing a small portion to thicken.
While the beans warm, crush garlic and mix with lemon, cumin, olive oil and salt.
Chop tomato, cucumber and parsley and warm the ready-made pita.
Stir the lemon mixture into the beans. Serve in two bowls with parsley, fresh vegetables and pita.
Uses canned or otherwise fully cooked fava beans, not dried beans. This is a Lebanese-style serving of a dish shared across several Middle Eastern cuisines. Timing is an editorial estimate for two portions, including the preparation described; larger batches can take longer. Not kitchen-tested by Schmackig.
