Ingredients for 2 portions
350 g Cooked chickpeas, drained
140 g Wheat pita bread
250 g Plain whole-milk yogurt
30 g Tahini
6 g Garlic
15 g Lemon juice
20 g Pine nuts
15 g Olive oil
1 g Ground cumin
10 g Fresh parsley
2 g Salt
60 g Water
Method
Tear pita into bite-sized pieces. Toast with half the oil in a wide pan for 5–6 minutes until crisp, turning frequently.
Warm drained canned chickpeas with water, cumin and half the salt in a saucepan for 6 minutes.
Whisk yogurt, tahini, crushed garlic, lemon and remaining salt. Toast pine nuts in the remaining oil in a small pan for 1–2 minutes, watching carefully.
Put pita in two bowls, add warm chickpeas and yogurt sauce, then scatter pine nuts and parsley over the top. Eat promptly while the bread is still crisp.
Uses cooked chickpeas and store-bought pita. Tahini and yogurt carry sesame and milk flags. No lamb is included in this chickpea version. Timing is an editorial estimate for two portions, including the preparation described; larger batches can take longer. Not kitchen-tested by Schmackig.
