Ingredients for 2 portions
200 g Egg, without shell
70 g Plain wheat flour
10 g Corn starch
50 g Fresh parsley
20 g Fresh mint
40 g Spring onion
60 g Onion
3 g Baking powder
2 g Paprika powder
2 g Ground cumin
28 g Rapeseed oil
60 g Water
3 g Salt
120 g Wheat pita bread
Method
Finely chop 50 g parsley, 20 g mint, 40 g spring onion and 60 g onion. Whisk 200 g beaten egg (about four eggs) with 60 g water. Stir in 70 g plain wheat flour, 10 g corn starch, 3 g baking powder, 2 g paprika, 2 g ground cumin and 3 g salt until smooth, then fold in all the chopped herbs and onion.
Heat a large non-stick pan over medium heat with the measured 28 g rapeseed oil, adding it in batches. Spoon in small fritters and cook for about 2–3 minutes per side, until golden and the egg centres are fully set. Work in two batches and drain briefly.
Warm 120 g wheat pita bread and divide the fritters and bread between two plates. Check packaged pita has no milk, honey or other unsuitable animal additives if cooking for an ovo-vegetarian.
Scaled from Rouba Shahin’s Lebanese ejjeh, which uses eggs, parsley, mint, onions, wheat and corn flour, spices and frying oil. This measured home version adds pita to make a meal and counts all 28 g oil conservatively, though some may remain in the pan. The picture does not show pita.
