Ingredients for 2 portions

Method

  1. Crack four eggs (about 200 g edible egg) into a bowl. Beat with 40 g milk, 2 g salt and 1 g black pepper. Finely cut 16 g fresh chives. Divide 160 g mixed rye-wheat bread into four slices.
  2. Warm 14 g olive oil in a non-stick pan over medium-low heat. Add the beaten eggs and gently push them through the pan with a spatula for 3–5 minutes until softly set with no runny liquid. Remove promptly so the eggs stay tender.
  3. Divide the eggs between two plates, scatter with the chives and serve with 80 g bread per person. Toast the bread briefly if desired. Check packaged bread for ingredients relevant to a lacto-ovo diet.

Based on the Austrian Kinder Essen Gesund Eierspeise mit Schnittlauch, which uses eggs, milk, rapeseed oil, chives and wholegrain bread. This version uses measured olive oil and mixed rye-wheat bread and adds pepper. The photograph shows plain eggs on white toast rather than the measured chive topping and rye bread. Calories and the 12-minute window are estimates, not kitchen-tested.
