Ingredients for 2 portions
200 g Dry wheat spaghetti
30 g Olive oil
15 g Garlic
5 g Fresh chilli
10 g Fresh parsley
2 g Salt
150 g Water
Method
Bring a large pan of water to the boil. Peel and thinly slice the garlic; chop chilli and parsley.
Cook the spaghetti for the packet time. Reserve a cup of its cooking water before draining.
While the pasta cooks, warm olive oil in a wide pan over medium-low heat. Cook garlic and chilli for 2–3 minutes without browning the garlic.
Add drained pasta, parsley and a splash of reserved water. Toss for 1–2 minutes until glossy, season with the listed salt as needed and serve.
No cheese is included. Start heating pasta water before chopping to meet the estimate. Reserved water may not all be needed. Timing is an editorial estimate for two portions, including the preparation described; larger batches can take longer. Not kitchen-tested by Schmackig.
