Ingredients for 2 portions
180 g Wheat baguette
180 g Whole-milk ricotta, vegetarian-labelled
200 g Fresh strawberries, hulled
15 g Balsamic vinegar
18 g Honey
6 g Fresh basil
1 g Salt
Method
Hull and slice 200 g strawberries. Toss with 15 g balsamic vinegar and 18 g honey; leave for 10 minutes while preparing the toast. Check the vinegar label for sulphites if relevant.
Slice 180 g plain wheat baguette into six to eight pieces and toast in a dry pan or toaster for about 3 minutes until crisp. Check the bread label for animal ingredients if following a vegetarian diet.
Stir 180 g whole-milk ricotta with 1 g salt until spreadable. Choose ricotta labelled vegetarian because some dairy cheese is made with animal rennet; divide it evenly across the warm toast.
Fold 6 g chopped basil into the strawberries. Spoon the fruit and all measured juices over the ricotta. Serve half the crostini to each person immediately.
Italian-style home adaptation of Mark Beahm’s strawberry-and-basil ricotta toast. The 10-minute strawberry rest fits within the 18-minute elapsed estimate while the bread is toasted. The photo uses mint as well as basil and may have a different balsamic ratio. This is a sweet toast meal, not a claim of a traditional Italian recipe. Ricotta must be vegetarian-labelled; baguette and balsamic labels require checks. Nutrition is estimated from all listed ingredient weights.
