Ingredients for 4 portions

Method

  1. Dice onion, carrot and celery, mince garlic and roughly chop kale and cabbage. Tear bread into chunks.
  2. Heat half the oil in a large pot. Soften onion, carrot and celery for 8 minutes, then add garlic and thyme for 1 minute.
  3. Add tomatoes, stock, kale, cabbage and beans. Simmer for 30 minutes until vegetables are tender; mash some beans to thicken.
  4. Stir in bread and simmer for 8–10 minutes until very thick. Rest for 5 minutes, finish with remaining oil and pepper and serve.

Uses cooked white beans. Traditional ribollita is often reheated the following day; this version can be served immediately.
