Ingredients for 2 portions
150 g Wheat semolina
18 g Olive oil
2 g Mustard seeds
2 g Curry leaves
60 g Onion
8 g Ginger
4 g Fresh chilli
70 g Carrot
70 g Green beans
70 g Peas
450 g Water
3 g Salt
12 g Lime juice
10 g Fresh coriander
Method
Dice the carrot and green beans small so they cook quickly. Chop the onion, ginger and chilli; measure 450 g water and bring it to a boil. Use plain wheat semolina, not pre-seasoned instant upma.
Dry-roast the semolina in a wide pan over medium-low heat for 3–4 minutes, stirring until fragrant and just pale gold. Tip it onto a plate.
Heat all 18 g olive oil in the pan. Add mustard seeds and curry leaves; when the seeds start to pop, add onion, ginger and chilli. Stir for 2–3 minutes.
Add carrot, green beans and peas. Cook for 4 minutes, stirring, until the vegetables are just tender. Add the hot water and measured salt and bring back to a simmer.
Rain in the roasted semolina while stirring to prevent lumps. Cover and cook gently for 5–7 minutes, stirring once, until the water is absorbed and the grains are soft. Rest off the heat for 2 minutes, then fluff and finish with lime juice and coriander.
Two breakfast portions. Oil replaces the ghee in the reference so this version uses no dairy. Use plain dried curry leaves and semolina, and check packaged products if your diet requires it. The photograph shows tomato, pale cubes and dark garnish not in the measured recipe; their ingredients and dietary suitability are unknown. Water is included but contributes no energy. The 30-minute total assumes small-cut vegetables and simultaneous water heating; timing and energy are estimates, not kitchen-tested by Schmackig.
