Ingredients for 2 portions

Method

  1. Soak or cook flat rice noodles following a packet method of no more than 10 minutes. Meanwhile slice beef thinly across the grain, cut greens and onion, and chop garlic.
  2. Mix fish sauce, soy sauce, oyster sauce, sugar and water. Heat half the oil in a large pan; sear beef for 2–3 minutes and transfer to a clean bowl.
  3. Add remaining oil, garlic, onion and greens. Stir-fry for 4 minutes, adding a splash of water if needed.
  4. Add drained noodles, beef and sauce. Toss over high heat for 3–4 minutes until noodles are tender and beef is cooked through. Divide into two bowls.

Choose flat rice noodles with a short packet preparation time. This home-style version uses bok choy as an accessible leafy green; no advance marinade is required. Timing is an editorial estimate for two portions, including the preparation described; larger batches can take longer. Not kitchen-tested by Schmackig.
