Ingredients for 3 portions

Method

  1. Whisk rice flour, coconut milk, 160 g water and turmeric; rest for 20 minutes. Mix fish sauce, lime, sugar, remaining water, minced garlic and chilli for dipping.
  2. Thinly slice pork and onion. Stir-fry pork and prawns in 10 g oil until fully cooked, then set aside.
  3. Heat a little remaining oil in a non-stick pan, add some onion, pour in a thin layer of batter and swirl. Scatter over filling and sprouts.
  4. Cover for 2 minutes, uncover and cook for 3–4 minutes until sprouts are hot and the base is crisp. Fold in half and repeat; serve with lettuce, mint and dip.
