Ingredients for 2 portions
180 g White wheat bread
600 g Chopped canned tomatoes
12 g Garlic
30 g Olive oil
16 g Fresh basil
120 g Water
3 g Salt
1 g Black pepper
Method
Check that 180 g day-old plain wheat bread has no milk, egg, honey or other animal ingredients. Tear it into small pieces. Finely slice 12 g garlic; measure 600 g chopped canned tomatoes, 120 g water, 16 g fresh basil and 30 g olive oil.
Warm 20 g olive oil in a wide saucepan over medium heat. Cook the garlic for about 1 minute without browning. Add the tomatoes, 3 g salt and 1 g black pepper; bring to a bubble and simmer uncovered for 15 minutes, stirring occasionally.
Stir in the torn bread and 120 g water. Simmer for about 7 minutes, pressing the bread against the pan until it largely dissolves and the mixture is thick but spoonable. If the bread is unusually dry, cover briefly and allow a little longer; do not claim the shorter time for larger, crusty pieces.
Tear in the basil, stir for 1 minute and divide between two bowls. Drizzle the remaining 10 g olive oil over the hot pappa and serve as a thick soup, not a clear broth.
Based on Lora’s Pappa al Pomodoro at Savoring Italy. This measured 30-minute adaptation uses chopped canned tomatoes and small pieces of already-stale bread to soften sooner; large or fresh crusty bread may take longer. Plain wheat bread must be checked for dairy, egg and honey before calling the dish vegan. The photo shows a thicker, paler bread-heavy pappa than this tomato-rich adaptation. Wheat gluten is flagged.
