Ingredients for 2 portions

Method

  1. Crumble purchased paneer. Finely chop onion, tomato, pepper, ginger and garlic.
  2. Heat oil in a pan. Cook onion, pepper, ginger and garlic for 6 minutes, stirring frequently.
  3. Add tomato, cumin, turmeric and salt. Cook for 5 minutes until thick, then fold in paneer and garam masala and warm for 3 minutes.
  4. Warm ready-made pita in a dry pan. Finish the paneer with coriander and serve with the bread.

Uses purchased paneer; making cheese from milk is outside this timing. Pita is a readily available substitute for Indian flatbread. Timing is an editorial estimate for two portions, including the preparation described; larger batches can take longer. Not kitchen-tested by Schmackig.
