Ingredients for 2 portions
200 g Egg, without shell
150 g Spring onion
15 g Olive oil
2 g Salt
0.5 g Black pepper
Method
Trim 150 g spring onions after removing roots and damaged outer leaves; slice thinly. Beat about four shelled eggs (200 g) with half the salt and pepper.
Warm 10 g of the measured olive oil in a 20–22 cm nonstick frying pan. Cook the spring onions on low-medium heat for 6–8 minutes until soft, without browning. Add a spoonful of water only if needed to stop sticking; allow it to evaporate.
Fold the softened onions into the eggs. Add the remaining 5 g olive oil to the pan, pour in the mixture, cover and cook on low heat for 6–8 minutes until mostly set.
Slide the frittata onto a plate, invert it back into the pan and cook the second side for 2–3 minutes until the centre is fully set. Cut into two portions and serve warm.
This is an egg-only vegetarian adaptation of the linked Italian frittata: olive oil replaces butter, so no dairy is included. Use four average eggs weighing about 200 g without shells. The Commons photo shows a more deeply browned, folded-looking preparation; the listed version is a thick pan frittata. At about 230 kcal per person it is a light meal, not a complete lunch by itself. Timing and energy are estimates, not kitchen-tested by Schmackig.
