Ingredients for 4 portions

Method

  1. Soak mushrooms for 15 minutes, rinse and chop. Prepare vermicelli according to the packet, drain and snip short. Mix both with pork, grated carrot, chopped shallot, egg and 15 g fish sauce.
  2. Briefly moisten a rice-paper sheet and lay on a board. Add a small line of filling, fold sides in and roll tightly. Repeat to make 16 small rolls.
  3. Heat oil in a wide frying pan over medium heat. Shallow-fry rolls in batches for 4–5 minutes per side until crisp and pork filling is cooked through; avoid crowding.
  4. Mix remaining fish sauce, sugar, lime and measured water for dipping. Serve rolls with lettuce and mint.

Four rolls per portion. All frying oil is included in the estimate; oil absorption varies. Rice-paper thickness changes frying time; check a roll from each batch.
