Ingredients for 2 portions

Method

  1. Thinly slice beef across the grain; toss with half the fish sauce, chopped lemongrass and half the garlic while you prepare the vegetables.
  2. Cook or soak vermicelli according to a 5–8-minute packet method. Drain and rinse cool. Shred lettuce and carrot, slice cucumber and pick the herbs.
  3. Mix lime, sugar, water and remaining fish sauce. Heat oil in a wide pan and fry the remaining garlic and beef for 3–4 minutes until cooked through.
  4. Divide noodles and vegetables into bowls. Add beef, herbs and peanuts, then spoon over the dressing and toss before eating.

Uses a brief seasoning rest during preparation, not an overnight marinade. Peanuts are included and flagged; no fried shallot garnish is counted. Timing is an editorial estimate for two portions, including the preparation described; larger batches can take longer. Not kitchen-tested by Schmackig.
