Ingredients for 2 portions
500 g Courgette
200 g Onion
200 g Egg, without shell
25 g Olive oil
120 g White wheat bread
3 g Salt
Method
Thinly slice 500 g courgettes and 200 g peeled onions. Beat 200 g shell-free egg (about four medium eggs) with 3 g salt. Set out 120 g plain wheat bread for serving.
Warm 25 g olive oil in a wide lidded pan over medium-low heat. Add onion and cook 5 minutes without browning. Add courgette, cover and cook about 15 minutes, stirring twice, until both are soft and their moisture has mostly evaporated. Remove the lid for the final 2–3 minutes if wet.
Lower the heat and pour in the beaten eggs. Fold slowly for 3–4 minutes until fully set but still soft. Divide between two plates and serve immediately with 60 g bread each.
Based on Spain’s official Murcian zarangollo method of slowly softening onion and courgette before setting eggs; bread is added here to make a light meal. Breakfast is a serving suggestion for this egg dish, while the source presents it as a first course. The 35-minute estimate depends on thin slices and pan size. Choose bread whose label suits ovo-vegetarian eating. The photograph shows the zarangollo without measured bread; portions and oil cannot be established visually. Calories and time are editorial estimates.
