Ingredients for 2 portions
150 g Plain besan (split Bengal gram flour), dry
25 g Olive oil
300 g Tomato
200 g Cucumber
80 g Pitted olives
30 g Lemon juice
10 g Fresh parsley
3 g Salt
1 g Black pepper
Method
Whisk 150 g plain dry besan with 300 g cool water, 10 g of the measured olive oil and 2 g salt until no dry lumps remain. Cover and rest the batter for a full 30 minutes; heat the oven to 245°C with a 30 cm oven-safe cast-iron or metal pan inside during the final 15 minutes.
While the batter rests, chop 300 g tomato and 200 g cucumber, halve 80 g pitted olives and chop 10 g parsley. Toss them with 30 g lemon juice. Keep this salad separate so it does not soften the socca.
Carefully remove the hot pan, coat it with the remaining 15 g olive oil and pour in all the batter. Bake 12–15 minutes until the centre is set and the edges are deeply golden. If still wet, bake longer. Cut into two generous portions and serve immediately with the salad and 1 g black pepper.
Adapted from Jeanine Donofrio and Phoebe Moore’s socca: this version uses the catalogue’s plain besan, which their source names as a chickpea-flour option, and adds measured vegetables and olives to make a light two-person meal. The reference requires at least 30 minutes of batter rest; the 50-minute total includes it. The vendor-pan photograph does not show the salad. Besan, timing and calorie values are editorial estimates; verify the actual packet and cross-contact warnings.
