Ingredients for 2 portions
200 g Egg, without shell
40 g Mayonnaise
10 g Fresh parsley
1 g Black pepper
2 g Salt
100 g Lettuce
200 g Tomato
160 g White wheat bread
Method
Bring a pan of water to a boil and lower in four eggs (about 200 g edible egg without shells). Simmer 10 minutes until hard-boiled, then cool promptly in cold water. Wash 100 g lettuce, slice 200 g tomato and chop 10 g parsley while the eggs cook.
Peel the cooled eggs and cut lengthwise. Lift out the yolks and mash them finely with a fork. Reserve a little yolk for the mimosa topping. Mix the rest with 40 g ready-made mayonnaise, most of the parsley, 1 g black pepper and 2 g salt.
Spoon the filling back into the eight egg-white halves. Sprinkle over the reserved crumbled yolk and remaining parsley. Divide the lettuce and tomato between two plates, add four egg halves to each, and serve with 80 g plain wheat bread per person.
Check the mayonnaise label for milk, honey or other non-ovo-vegetarian ingredients and the bread label for milk, eggs or other unsuitable animal additives. Keep the eggs chilled if not serving immediately; discard food that has been left unrefrigerated too long.
Based on the French egg-industry Œufs mimosa recipe, which serves the filled eggs as a starter. This measured bread-and-salad adaptation makes a light lunch. The photograph shows only two halves, with no bread, lettuce or tomato; the pictured mayonnaise ingredients are unknown. The dietary fit is conditional on suitable mayonnaise and bread labels. Estimated calories and time are not kitchen-tested.
