Ingredients for 2 portions
200 g Egg, without shell
180 g White wheat bread
8 g Fresh chives
2 g Salt
1 g Black pepper
Method
Bring a pan of water deep enough to cover four eggs to a gentle boil. Have 200 g egg without shells as the edible weight, about four medium eggs in their shells. Slice 180 g white wheat bread into narrow dipping strips and chop 8 g fresh chives.
Lower the shell-on eggs carefully into the boiling water. Cook for about 4 minutes for a soft centre, adjusting for egg size and starting temperature; if a fully set yolk is preferred, cook longer. Meanwhile toast the bread strips until crisp.
Lift the eggs into egg cups and tap off the tops. Divide the toast and chives between two plates, seasoning the eggs with 2 g salt and 1 g black pepper in total. Eat immediately by dipping the strips into the yolks.
France’s Manger Bouger recipe pairs eggs à la coque with toasted bread mouillettes and chives. This version serves two eggs per person with a measured bread portion and no butter, keeping it suitable for an ovo-vegetarian diet if the bread label is suitable. The photo depicts one egg and differently toasted bread strips; pictured spreads or coatings, if any, are not in the measured recipe. Cooked egg weights exclude shells. The 12-minute time assumes water is heated promptly; egg size changes boiling time. Calories are editorial estimates.
