180 g Dry wheat noodles
200 g Boneless skinless chicken thigh
100 g Egg, without shell
120 g White cabbage
100 g Mung bean sprouts
100 g Tomato

25 g Tomato ketchup
20 g Rapeseed oil

Method
Cook noodles following the packet, drain well and separate strands. Mix sweet soy, soy sauce, sambal and ketchup.
Heat oil in a wok. Fry sliced shallot and garlic for 1 minute, add chicken strips and cook for 5–6 minutes until cooked through.
Add cabbage and tomato and fry for 2 minutes. Push aside, pour in beaten egg and scramble until set.
Add noodles, sauce and sprouts. Toss for 2–3 minutes until piping hot and sprouts are cooked. Finish with lime.
Uses dried wheat noodles; fresh yellow noodles need a different shopping weight. Sambal contains shrimp in this version.
