Ingredients for 4 portions
750 g Beef for stewing
600 g Coconut milk, full-fat
50 g Unsweetened grated coconut
150 g Shallots
20 g Garlic
20 g Ginger
25 g Galangal
35 g Lemongrass
25 g Fresh chilli
4 g Ground turmeric
4 g Ground coriander seed
25 g Unsweetened tamarind paste
20 g Palm sugar
3 g Makrut lime leaves
15 g Rapeseed oil
250 g Water
4 g Salt
Method
Toast grated coconut in a dry pan until golden, stirring continuously, then grind finely. Blend shallots, garlic, ginger, galangal, chilli and the tender part of lemongrass with a little measured water.
Fry the spice paste in oil for 5 minutes. Add beef chunks, turmeric and coriander and stir to coat.
Add coconut milk, remaining water, lime leaves, tamarind, sugar and salt. Simmer very gently, partly covered, for 2 hours, stirring and adding water if necessary.
Stir in toasted coconut and cook uncovered for 30–45 minutes, stirring frequently, until beef is tender and sauce clings thickly. Remove lime leaves.
Rendang is shared across the region; this is a Malaysian-style adaptation. Rice is separate. Watch closely as the sauce reduces to prevent scorching.
