Ingredients for 2 portions

Method

  1. Slice chicken into thin strips and shred vegetables. Boil plain instant noodles for 1 minute less than the packet time and drain; set aside the seasoning sachets unused.
  2. Heat oil in a wok. Stir-fry onion and garlic for 1 minute, add chicken and cook for 4–5 minutes until cooked through.
  3. Push chicken aside and scramble the eggs until set. Add vegetables and curry powder and stir-fry for 2 minutes.
  4. Add noodles, soy sauce, sweet soy sauce and water. Toss for 2 minutes until hot and evenly coated; finish with lime.

Choose plain instant wheat noodles and do not use the seasoning sachet. Noodle brands vary in oil, egg and other allergens; energy is an approximate generic value. Timing is an editorial estimate for two portions, including the preparation described; larger batches can take longer. Not kitchen-tested by Schmackig.
