Ingredients for 8 portions

Method

  1. Rinse sticky rice and soak in water for 4 hours, then drain. Mix with 200 g coconut milk, measured water and 1 g salt in a greased 18 cm heatproof tin. Steam for 25–30 minutes until tender, stirring once.
  2. Press hot rice firmly into an even compact layer. Keep the steamer water at a gentle simmer.
  3. Whisk remaining coconut milk and salt with eggs, sugar, rice flour, wheat flour and pandan extract. Strain, then stir over very low heat for 3–4 minutes until slightly thickened but pourable.
  4. Pour custard over rice and steam gently for 25–30 minutes until set, covering the lid with a cloth to catch condensation. Cool for at least 60 minutes before cutting into eight pieces.

Includes four-hour soaking and cooling. The green colour depends on your pandan extract; check its ingredients. Keep cloth ends away from the heat source and refrigerate cooled leftovers.
