Ingredients for 2 portions
400 g Plain ready-cooked rice
350 g Fresh soybean sprouts (kongnamul), not mung sprouts
40 g Spring onion
28 g Soy sauce
10 g Garlic
12 g Sesame oil
12 g Sesame seeds
6 g Sugar
50 g Water
Method
Use 400 g plain ready-cooked rice, already prepared and safely chilled; cooking dry rice adds about 25–35 minutes beyond this recipe. Rinse 350 g fresh soybean sprouts well, discard discoloured beans, and slice 40 g spring onion. Soybean sprouts are different from mung bean sprouts.
Put the sprouts and 50 g water in a covered pan. Bring to a vigorous simmer and cook covered for 6–7 minutes until completely hot and tender; do not serve the sprouts raw. Remove the lid after cooking.
Meanwhile mix 28 g soy sauce, 10 g minced garlic, 12 g toasted sesame oil, 12 g sesame seeds and 6 g sugar with the sliced spring onion. Heat the ready-cooked rice thoroughly according to its package until steaming hot.
Fold the hot sprouts into the rice, divide into two bowls and spoon over all the measured sauce. Serve at once.
A quick plant-only adaptation of Maangchi’s kongnamulbap: her version cooks raw rice with sprouts and may include beef, egg and honey. This version uses ready-cooked rice, no animal products and a sugar-sweetened sauce; it takes 25 minutes only if rice is already cooked and chilled. Plain soy sauce is checked for animal-free ingredients if needed; wheat gluten, soy and sesame are flagged. Photo shows cooked sprout rice without the measured sauce visible.
