Ingredients for 2 portions

Method

  1. Bring prepared vegetable stock to a gentle simmer. Put a second pot of water on for noodles. Slice vegetables into thin strips and beat the eggs.
  2. Warm half the sesame oil in a non-stick pan. Cook a thin egg sheet until fully set, transfer to a board and slice into ribbons.
  3. Use the remaining oil to stir-fry carrot, courgette and mushrooms for 5 minutes. Cook the noodles for their packet time, drain and divide between bowls.
  4. Season the hot stock with soy sauce, pour over the noodles, and top with vegetables, egg ribbons and spring onion.

Quick vegetarian adaptation using prepared vegetable stock rather than making anchovy broth. Stock weight refers to ready-to-use liquid; check its celery and other labels. Timing is an editorial estimate for two portions, including the preparation described; larger batches can take longer. Not kitchen-tested by Schmackig.
