Ingredients for 2 portions

Method

  1. Cut 350 g zucchini into roughly 8 mm rounds and sprinkle with 2 g salt. Leave for 8 minutes while beating two shelled eggs (about 100 g) and measuring 20 g plain wheat flour.
  2. Blot the zucchini dry. Dust every round lightly with the measured flour, then stir any flour left on the plate into the beaten egg so it is not discarded. Dip each round in the egg coating.
  3. Heat half the 15 g rapeseed oil in a wide nonstick pan over medium heat. Cook the coated zucchini in batches for 2–3 minutes per side until the coating is set and lightly golden, adding the rest of the oil for later batches. Cook any leftover egg as a small omelette so all measured food is served.
  4. Heat 300 g plain ready-cooked rice thoroughly. Stir 15 g soy sauce, 10 g plain rice vinegar and 10 g water into a dipping sauce. Divide the zucchini, any remaining cooked egg and rice evenly between two plates and serve with the sauce.

An egg-coated individual-round jeon, distinct from the catalogue’s mixed spring-onion pajeon. The linked Korean reference salts the zucchini longer; this 30-minute adaptation uses a short 8-minute rest and a wide pan, so thicker pieces may need more time. Rice is already cooked and included in the energy estimate. This is ovo-vegetarian if the actual soy sauce and other products suit that diet; soy sauce conservatively flags gluten. The photograph shows only jeon without the included rice or sauce. Calories and timing are estimates, not kitchen-tested.
