Ingredients for 2 portions
100 g Plain wheat flour
250 g Egg, without shell
100 g Whole milk
12 g Butter
20 g Sugar
4 g Baking powder
4 g Rapeseed oil
2 g Salt
Method
Preheat the oven to 200°C. Lightly oil four small oven-safe muffin or mini-loaf moulds with all 4 g rapeseed oil. Melt 12 g butter. Separate about 50 g of the 250 g shelled egg (one egg) for the batter; reserve the other 200 g as four intact eggs for the tops.
Whisk 100 g plain wheat flour, 4 g baking powder, 20 g sugar and 2 g salt. Add the 50 g batter egg, 100 g whole milk and melted butter; whisk only until smooth. Divide the batter evenly among four moulds, filling each no more than halfway, and gently place one remaining egg on top of each.
Bake on the middle rack for roughly 15–20 minutes until the bread is cooked through and every egg white is fully set; use the longer end for muffin cups or deeper moulds. Remove carefully and serve two breads per person while warm. If the batter or egg is still raw, continue baking and allow extra time.
Based on Maangchi’s Korean street egg bread; this home version makes four smaller portions and omits optional cheese and vanilla. Two pieces form a substantial sweet-savoury breakfast per person rather than a single street snack. The photo shows vendor breads but not their interiors or ingredient list. The 30-minute estimate includes oven preheating overlapping mixing; actual mould size and oven performance can extend baking, and calories have not been laboratory tested.
