Ingredients for 2 portions
400 g Plain ready-cooked rice
100 g Egg, without shell
20 g Rapeseed oil
6 g Dried nori seaweed
20 g Soy sauce
8 g Sesame oil
8 g Sesame seeds
Method
Have 400 g plain ready-cooked rice safely chilled or freshly hot; cooking dry rice is not included in the 17-minute estimate. Divide it into two portions and press each into a compact, thick disc. Crush 6 g plain toasted nori and divide between two bowls.
Heat 12 g rapeseed oil in a nonstick pan over medium-high heat. Brown the rice discs for 3–4 minutes per side until the outside is lightly crisp and the centre is steaming hot. Set one disc on the nori in each bowl.
Add the remaining 8 g rapeseed oil to the pan. Fry two eggs (100 g edible weight) until the whites are fully set, about 2–3 minutes; keep the yolks soft if preferred. Place one egg on each rice disc.
Drizzle each bowl with 10 g soy sauce and 4 g sesame oil, then scatter 4 g sesame seeds over each. Break the yolk into the rice at the table and serve at once.
Adapted for two from Maangchi’s crispy-rice gyeranbap. Ready-cooked rice is a stated prerequisite; reheat until steaming hot and handle leftovers safely. This is ovo-vegetarian if the plain soy sauce and nori contain no animal additives. The Commons photograph shows a simpler soy egg rice with herb flecks, without clearly visible crisp rice, nori or sesame. Soy sauce contains soy and wheat gluten; sesame oil/seeds and eggs are flagged. Calories are ingredient-weight estimates, not laboratory values.
