Ingredients for 2 portions
200 g Egg, without shell
30 g Onion
30 g Carrot
15 g Spring onion
12 g Rapeseed oil
1.5 g Salt
0.5 g Black pepper
300 g Plain ready-cooked rice
20 g Water
Method
Use plain ready-cooked rice; cooking dry rice is not included in this timing. Finely mince the onion, carrot and spring onion. Beat the eggs with salt and pepper, then stir in the vegetables.
Brush a non-stick pan with part of the measured oil and heat on medium-low. Pour in one third of the egg mixture and tilt into a thin layer.
When the base holds together but the top remains moist, roll the layer towards one side. Oil the exposed pan, add another third so it joins the roll, then roll again. Repeat with the remaining egg.
Cook the finished roll on low heat, turning onto its sides for 3–4 minutes, until the centre is fully set. Rest for 5 minutes before slicing.
During the rest, heat the rice with the measured water according to its packet instructions until steaming throughout. Divide the rice and sliced omelette between two plates.
Dairy-free ovo-vegetarian adaptation, without ham, cheese or fish seasoning. Total time includes the 5-minute rest and reheating ready-cooked rice. The photograph shows the vegetable egg roll alone; 150 g cooked rice per person is included in this recipe and calorie estimate. Egg-roll portions and vegetable ratios differ from the photo.
