Ingredients for 2 portions
400 g Plain ready-cooked peeled potatoes
100 g Egg, without shell
140 g Tinned tuna in water, drained
180 g Tomato
120 g Bell pepper
50 g Onion
45 g Pitted olives
25 g Olive oil
3 g Salt
1 g Black pepper
2 g Paprika powder
Method
Use 400 g plain ready-cooked peeled potatoes and two hard-boiled eggs (100 g without shells), both cooked and fully cooled in advance; boiling and cooling them from raw adds at least 35–45 minutes. Drain 140 g canned tuna in water.
Cube the potatoes and tomato, dice 120 g bell pepper and 50 g onion, halve 45 g pitted olives, and quarter the eggs. Mix potatoes, tomato, pepper, onion, olives and tuna in a large bowl.
Whisk 25 g olive oil with 2 g sweet paprika, 3 g salt and 1 g black pepper. Toss the dressing through the salad gently, then arrange the egg pieces on top.
Serve immediately at a cool or room temperature. If preparing ahead, refrigerate promptly and keep chilled until serving.
Adapted from Sonia Mas’s ensalada campera, using ready-cooked chilled potatoes and eggs to reduce the assembly time to 15 minutes. From raw potatoes and eggs, total preparation plus cooling is about 50–60 minutes. Tuna in water is counted by drained weight. The photo shows additional carrot and possibly other vegetables absent from the measured recipe. Contains fish and eggs. Nutrition is estimated from all listed ingredient weights.
