Ingredients for 2 portions
360 g Plain ready-cooked rice
240 g Chicken breast
800 g Water
100 g Carrot
12 g Ginger
30 g Spring onion
10 g Sesame oil
15 g Soy sauce
2 g Salt
1 g Black pepper
Method
Use 360 g plain rice that has already been cooked and chilled safely. Dice 100 g carrot into small pieces, finely cut 12 g ginger and 30 g spring onion, and slice 240 g raw chicken breast into thin bite-size strips. Keep raw chicken separate from ready-to-eat ingredients.
Put the rice, 800 g water, carrot and ginger in a saucepan. Bring to a boil, then simmer for about 10 minutes, stirring often. Press some grains against the pan with a spoon to thicken the broth; add a little extra boiling water only if the pan becomes too dry.
Add the chicken strips and simmer gently for 8–10 minutes until every piece is fully cooked through (74°C in the centre). Stir in 2 g salt and 1 g pepper. Divide between two bowls and top with all 30 g spring onion, 10 g sesame oil and 15 g soy sauce. Serve hot.
Based on a Malaysian university health centre’s chicken-porridge breakfast, itself credited to Linda Ooi’s Chinese-style chicken congee. This fast adaptation starts with 360 g safely stored ready-cooked rice rather than dry rice; cooking rice from dry adds about 35–45 minutes. The university version lists optional vegetables, so carrot is included here. Soy sauce adds gluten and soy, and sesame oil adds sesame. The photograph includes an unmeasured garnish, and its exact ingredients cannot be confirmed. Calories and 30-minute timing are ingredient-based editorial estimates, not kitchen-tested.
