Ingredients for 3 portions
550 g Boneless skinless chicken thigh
3 g Ground turmeric
3 g Salt
25 g Rapeseed oil
120 g Shallots
15 g Garlic
20 g Ginger
12 g Dried red chillies
250 g Tomato passata
120 g Coconut milk, full-fat
150 g Water
2 g Cinnamon stick
0.5 g Cloves
1 g Ground cardamom
15 g Sugar
12 g Fresh coriander
Method
Soak dried chillies in hot water for 15 minutes, drain and blend with shallots, garlic and ginger. Coat chicken pieces with turmeric and salt.
Heat oil in a heavy pan and brown chicken for 6–8 minutes, then remove.
Fry blended paste with cinnamon, cloves and cardamom for 5 minutes. Add passata, coconut milk, measured water and sugar and bring to a simmer.
Return chicken and simmer partly covered for 20–25 minutes until cooked through and sauce thickens. Remove cinnamon and finish with coriander.
Boneless chicken thighs shorten cooking. This pan-browned home version uses less frying oil than deep-fried preparations; rice is separate.
