Ingredients for 2 portions
100 g Blanched raw almonds
120 g White wheat bread
6 g Garlic
30 g Olive oil
12 g Wine vinegar
500 g Water
2 g Salt
100 g Fresh seedless grapes
Method
Use 100 g already-blanched raw almonds and 120 g day-old white wheat bread with the crust removed. Tear the bread and soak it in 150 g of the measured cold water for 5 minutes. Peel 6 g garlic and halve 100 g seedless grapes.
Blend the almonds, garlic and remaining 350 g cold water for 1–2 minutes. Add the soaked bread with all its soaking water, 30 g olive oil, 12 g wine vinegar and 2 g salt. Blend until very smooth; do not strain away the almond or bread solids, since all their calories are included.
Taste the soup and divide into two large bowls. Top each with half the grapes. It may be served immediately with well-chilled ingredients; for a colder traditional serving, refrigerate the finished soup for at least 2 hours in addition to the 20-minute active window.
Goya Foods describes the almond, bread, garlic, olive-oil, vinegar and grape combination. Its reference strains the soup and chills it for two hours; this measured main-meal adaptation keeps the blended solids to match the calorie estimate and uses chilled ingredients for immediate service. Optional two-hour refrigeration is not part of the 20-minute active time. Check white bread for vegan suitability and wine vinegar for sulphites. Tree nuts (almonds), gluten and sulphites are flagged. The CC0 photograph shows two grapes on a larger bowl and has unknown ingredient quantities.
